Christmas Baked Desserts Ideas

Christmas Bibingka (Baked Rice Cake)
A traditional Filipino dessert, bibingka is a soft and sweet rice cake topped with either a salty duck egg or cheese. Bibingka is commonly sold on streets during the Christmas season, often after simbang gabi or Christmas night mass.

Coconut milk (Brand: Coco Mama, may use other brands if not available) | 200 grams | 1 cup |
Yield: 8 pieces
Procedure:
Step 1 – Using a paddle attachment, beat whole eggs at medium speed for 1 – 2 minutes.
Step 2 – Blend in Bibingka Mix and coconut milk. Mix for 1 minute at medium speed until free of lumps. Scrape. Continue mixing for 1 minute.
Step 3 – Pour 70 grams of batter on a banana leaf-lined mamon cup*.
*Dimension: Base – 3.75″ diameter; Mouth – 3.75″ diameter; Height – 1″
Step 4 – Bake for 5 minutes using an oven toaster with the top and bottom heat turned on.
Step 5 – Place a slice of cheese and a slice of salted egg on top of Bibingka. Continue to bake for another 5 to 7 minutes or until a golden-brown crust is achieved.
Step 6 – Remove from oven. Brush top of Bibingka with melted butter. Leave to cool and transfer to wire rack.
Sweet & Chewy Butterscotch Brownies
Sweet and chewy, butterscotch brownies are simple yet satisfying desserts for every sweet tooth in town.

Butter or Refrigerated Margarine | 100 grams | 1 cup |
Eggs | 150 grams | 3 pcs |
Yield: (2″x2″ cut): 24 bars
Procedure:
Step 1 – Cream butter or refrigerated margarine to smooth consistency for approximately 3 – 5 minutes at medium speed.
Step 2 – Add Butterscotch Brownies Mix. Blend at low speed for 1 minute or until mixture is well incorporated. Scrape.
Step 3 – Add eggs and mix for 1 minute at low speed or until no lumps are observed.
Step 4 – Distribute the batter into a previously greased 12″ x 8″ x 2″ rectangular pan.
Step 5 – Add desired toppings and bake at 3600 F (1820 C) for 25-30 minutes or until done.

Chocolate Crinkles – Christmas Cookies
Classic yet irresistible holiday treats, chocolate crinkles hold a crunch of cookies on the outside but with a fudgy brownie texture on the inside.

All Purpose Shortening | 10 grams | 1 tbsp |
Butter or Refrigerated Margarine | 10 grams | 1 tbsp |

Water | 28 grams | 1/8 cup |
Egg | 9 grams | 1 tsp |
Yield: 20 pcs
Procedure:
Step 1 – In a mixing bowl with a paddle attachment, cream butter or refrigerated margarine and shortening for 3 to 5 minutes at low speed or until well blended. Scrape sides of bowl and paddle.
Step 2 – In a separate bowl, dissolve glucose in water.
Step 3 – Add glucose mixture and eggs to butter-shortening mixture. Mix for 1 minute at low speed. Scrape sides of bowl and paddle.
Step 4 – Add in Chocolate Crinkles Mix and mix at low speed until well incorporated. Scrape sides of bowl and paddle.
Step 5 – Remove dough from bowl and place on a working table. Roll dough to form a log (1″ diameter) and slice with a thickness of 1 inch (approximately 13 grams). Put each slice in a tray then cover.
Step 6 – Place the tray in a chiller for at least 1 hour.
Step 7 – Remove from chiller and thaw the dough for 30 to 45 minutes.
Step 8 – Roll each dough in powdered sugar and place it in a baking tray.
Step 9 – Bake at 3500 F (1760C) for 7 to 8 minutes or until done.
Step 10 – Remove from oven and let it cool.
Chewy Macaroons

Step 1 – Mix Macaroon Mix, egg, and water until smooth.
Step 2 – Scoop batter in a previously greased and paper-lined muffin tray (each muffin cup containing approximately 30 g batter).
Step 3 – Bake at 32500F (1600C) for 20 minutes or until golden brown.
